Banana Nut Chocolate Chip Muffins |
Ingredients:
- 2 ripe bananas
- 1 cup brown sugar
- 1 stick butter (softened)
- 2 eggs
- 2 cups whole wheat flour
- 1 teaspoon baking soda
- Brewed coffee to taste (this is optional, I usually add about a quarter of a cup)
- Walnuts to taste (toasted if you prefer)
- Chocolate chips to taste
Directions:
- Preheat oven to 325 degrees.
- Mash up bananas.
- Combine bananas, sugar, and butter in mixer and mix until creamy.
- Add eggs and mix some more.
- Add coffee and mix some more!
- Add flour and mix until everything is combined into a homogenous mixture.
- Add walnuts and chocolate chips and mix until they're evenly distributed.
- Add baking soda and mix.
- Place cupcake wrappers in muffin pan (you could skip these and just grease the muffin pan too, but it's kind of a pain in the butt to wash, and the boy has asked me kindly to use these from now on).
- Fill each muffin cup about 3/4 full with batter.
- Bake for 15-20 min, until a fork stabbed in the center comes out clean (except for melted chocolate! Yum!).
- Stuff in mouth and be blissful.

Makes about 18 muffins.
