Khaana...Num Num Style!


Oatmeal Chocolate Chip Cookies!!




Ingredients:

  • 2 sticks butter (this recipe makes a lot of cookies, don't worry)
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups white (all purpose) flour
  • 1 cup oatmeal (if you're not a huge fan of the oatmeal, you can just use an extra cup of white flour)
  • Chocolate chips to taste (I put... well, a lot. ;-) )
Directions:
  1. Preheat oven to 325 degrees.
  2. Soften butter slightly in microwave (I usually put the sticks in a bowl and nuke them for about 20 seconds).
  3. Combine butter and both kinds of sugar and mix in mixer until smooth.
  4. Add eggs and vanilla extract and mix until smooth. The mixture should have a little bit of an airy texture to it now from the beaten eggs.
  5. Add flour and oatmeal and mix until it's completely incorporated.
  6. Cover cookie sheets with foil.
  7. Drop cookie dough in spoonfuls on to cookie sheet (try to refrain from eating!!). I usually like to roll the cookie dough into little balls before dropping them on the sheet so they come out nice and round, but you don't have to.
  8. Bake in oven for about 7-10 minutes. If you like your cookies to stay chewy (the boy is very particular about the chewiness of the cookies), bake them until the bottoms look like they're just starting to turn brown and then pull them out. The tops might still look slightly uncooked, but don't worry, they'll set and harden a little once you pull them out of the oven. If you like your cookies crunchier, let them go an extra couple of minutes.
  9. Try to give them a couple of minutes to cool (I know it's hard, but they'll just fall apart if they're too hot).
  10. Dunk warm cookies in a glass of milk, stuff in mouth, and be joyful.
Makes about 40-50 cookies.



Banana Nut Chocolate Chip Muffins!!

Banana Nut Chocolate Chip Muffins


Ingredients:

  • 2 ripe bananas
  • 1 cup brown sugar
  • 1 stick butter (softened)
  • 2 eggs
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • Brewed coffee to taste (this is optional, I usually add about a quarter of a cup)
  • Walnuts to taste (toasted if you prefer)
  • Chocolate chips to taste
Directions:
  1. Preheat oven to 325 degrees.
  2. Mash up bananas.
  3. Combine bananas, sugar, and butter in mixer and mix until creamy.
  4. Add eggs and mix some more.
  5. Add coffee and mix some more!
  6. Add flour and mix until everything is combined into a homogenous mixture.
  7. Add walnuts and chocolate chips and mix until they're evenly distributed.
  8. Add baking soda and mix.
  9. Place cupcake wrappers in muffin pan (you could skip these and just grease the muffin pan too, but it's kind of a pain in the butt to wash, and the boy has asked me kindly to use these from now on).
  10. Fill each muffin cup about 3/4 full with batter.
  11. Bake for 15-20 min, until a fork stabbed in the center comes out clean (except for melted chocolate! Yum!).
  12. Stuff in mouth and be blissful.
Num num style!!!!

Makes about 18 muffins.
